Honeyed chicken does not become a dessert!

I can never forget how aghast I was when I saw honey applied liberally to the whole chicken before it was popped into the oven! Honey would make the skin of the chicken nice an crisp, I was told. I was not convinced. Anyway, I do not like to eat the skin on the chicken pieces, crisp or not. I have, since then, come across several honey chicken recipes. Honey was one of the ingredients in these recipes, and only a small amount of it was used. It is like adding sugar to some curries. The sweetness balances the other flavours, I am told. I cannot say that I am crazy about sweet and sour preparations but I can make exceptions to chicken preparations in which honey is used.
